Plant-Based Gluten-Free Snickerdoodle Cookies
Ingredients
- 2 flax eggs (2 tbsp flax meal mixed with 4 tbsp water)
- 1/4 cup unsweetened apple sauce
- 3 tbsp coconut oil
- 1/3 cup almond milk
- 1 cup almond flour
- 2 tbsp coconut flour
- 1/3 cup coconut sugar
- 1 tsp pure vanilla extract
- 1 tsp cinnamon
- 1 tsp baking soda
Optional add-ins
- 2 tbsp pumpkin seeds powder
- 2 tbsp Lucuma
- 1/2 tbsp maca powder
Toppings
- Sprinkle sea salt
- Sprinkle coconut sugar
- Sprinkle cinnamon
Preparation
Mix all wet ingredients in a big bowl.
Add dry ingredients and mix well until cookie dough forms.
Spoon onto lightly greased parchment lined baking sheet.
Sprinkle toppings and bake at 350 for 12 minutes.
