Plant-Based Gluten-Free Snickerdoodle Cookies

Ingredients

  • 2 flax eggs (2 tbsp flax meal mixed with 4 tbsp water)
  • 1/4 cup unsweetened apple sauce
  • 3 tbsp coconut oil
  • 1/3 cup almond milk
  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1/3 cup coconut sugar
  • 1 tsp pure vanilla extract
  • 1 tsp cinnamon
  • 1 tsp baking soda

Optional add-ins

  • 2 tbsp pumpkin seeds powder
  • 2 tbsp Lucuma
  • 1/2 tbsp maca powder

Toppings

  • Sprinkle sea salt
  • Sprinkle coconut sugar
  • Sprinkle cinnamon

Preparation

  1. Mix all wet ingredients in a big bowl.

  2. Add dry ingredients and mix well until cookie dough forms.

  3. Spoon onto lightly greased parchment lined baking sheet.

  4. Sprinkle toppings and bake at 350 for 12 minutes.

  5. Enjoy!
