Cashew Butter Ginger Cookies
Ingredients
- 1 flax egg
- 1/3 cup cashew butter
- 1/4 cup full fat coconut cream or milk
- 1 tsp pure vanilla
- 1 tbsp melted vegan butter or 1 tbsp melted coconut oil
- 1-2 tbsp pure maple
- 1-2 tsp pure maple syrup
- 1/4 cup almond flour
- Dash of sea salt
- 1 tsp baking soda
- 1/4 cup extra dark chocolate chips
- optional: adaptogens such as maca and ashwagandha
Preparation
Mix the wet ingredients in a bowl.
Add the dry ingredients and combine until dough forms.
Spoon onto a baking sheet and bake for 13 minutes at 350.
