Cashew Butter Ginger Cookies

Ingredients

  • 1 flax egg
  • 1/3 cup cashew butter
  • 1/4 cup full fat coconut cream or milk
  • 1 tsp pure vanilla
  • 1 tbsp melted vegan butter or 1 tbsp melted coconut oil
  • 1-2 tbsp pure maple
  • 1-2 tsp pure maple syrup
  • 1/4 cup almond flour
  • Dash of sea salt
  • 1 tsp baking soda
  • 1/4 cup extra dark chocolate chips
  • optional: adaptogens such as maca and ashwagandha

Preparation

  1. Mix the wet ingredients in a bowl.

  2. Add the dry ingredients and combine until dough forms.

  3. Spoon onto a baking sheet and bake for 13 minutes at 350.
