Peanut Butter Chocolate Chunk Blondies

Ingredients

  • 2 flax OR regular eggs
  • 1 cup pumpkin purée
  • 1 tbsp apple sauce or 1 mashed banana
  • 3/4 cup almond flour
  • 1/4 cup peanut butter or any nut butter
  • 2 tbsp sweetener of choice (maple syrup, raw honey, coconut sugar, date syrup, or 1 tbsp monk fruit)
  • 1 tsp Vanilla
  • 1 tsp baking soda
  • 3 tbsp extra dark chocolate chips / chunks, divided
  • sea salt to sprinkle
  • Optional: protein or collagen powder of choice

Preparation

  1. Preheat oven to 350.

  2. Mix all ingredients except baking soda, chocolate chips, and sea salt.

  3. Fold in 2 tbsp chocolate and baking soda.

  4. Pour into a lightly oiled baking pan.

  5. Sprinkle with remaining chocolate and sea salt.

  6. Bake for 25 minutes.

  7. Let cool to thicken.

Notes

  1. As always, I use the cleanest functional ingredients, meaning every single ingredient has a holistic benefit in excess of its nutritional profile. For example, flax meal is high in protein and fiber and helps balance progesterone to estrogen levels. Dark chocolate high in cacao destresses and makes you feel good. Enjoy!
