Oatmeal Chocolate Chip Cookies

Ingredients

  • 1 flax egg (1 tbsp flax meal + 2 tbsp water) or 1 real egg
  • 2 tbsp creamy peanut butter
  • 1 tbsp apple sauce or 1 tbsp coconut oil
  • 1/2 tsp vanilla
  • 3 tbsp maple syrup (add extra for sweetness)
  • 1/2 cup pre-soaked or sprouted gluten-free oats
  • 2 tbsp cassava flour or almond flour
  • 2 tbsp pumpkin seeds or powder or protein or collagen or coconut flour
  • 2 tbsp extra dark chocolate chips
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp sea salt

Optional superfoods

  • 1 tbsp ashwagandha
  • 1 tbsp lucuma
  • 1 tbsp maca powder

Preparation

  1. Mix flax egg, peanut butter, vanilla, applesauce, and maple syrup until creamy.

  2. Add oats, cassava, pumpkin seeds or flour, half of the chocolate chips, baking powder and soda.

  3. Mix until batter forms.

  4. Spoon onto a lined baking sheet.

  5. Sprinkle each cookie with a few more chocolate chips and sea salt.

  6. Bake at 350 degrees for 12-13 minutes.
