Sweet Potato Chocolate Swirl Brownies
Ingredients
- 3 small sweet potatoes, boiled then peeled & mashed
- (About 1 1/2 cups)
- 1 very ripe banana
- 2 tbsp unsweetened applesauce
- (Or sub with coconut oil)
- 1 flax egg
- (1 tbsp flax mea + 2 tbsp water)
- 1 tsp Vanilla extract (1 tbsp flax meal + 2 tbsp water)
- 3.5 tbsp maple syrup
- 2 tbsp creamy peanut or almond butter
- 1/4 cup cassava flour
- 3 tbsp coconut flour
- 1 tbsp cacao powder
- 1/2 cup extra dark chocolate chips, divided
- 1 tsp baking soda
- dash of sea salt
Preparation
In a large bowl, mash peeled sweet potatoes with banana until smooth
Note, you can do this in a food processor as well
Add applesauce, vanilla, peanut butter, maple syrup, and flax egg and mix until creamy (it may be a bit chunky, and that’s okay)
Add flours, cacao, and baking powder and mix well
Fold in 1/2 of the chocolate chips
Pour into a lightly oiled glass baking dish and spread evenly
Sprinkle remaining chocolate chips and sea salt over the top
Bake at 350 for 20-25 minutes
The center may not be cooked “fully through,” but that’s okay, they are vegan so edible and delicious either way
