Sweet Potato Chocolate Swirl Brownies

Ingredients

  • 3 small sweet potatoes, boiled then peeled & mashed
  • (About 1 1/2 cups)
  • 1 very ripe banana
  • 2 tbsp unsweetened applesauce
  • (Or sub with coconut oil)
  • 1 flax egg
  • (1 tbsp flax mea + 2 tbsp water)
  • 1 tsp Vanilla extract (1 tbsp flax meal + 2 tbsp water)
  • 3.5 tbsp maple syrup
  • 2 tbsp creamy peanut or almond butter
  • 1/4 cup cassava flour
  • 3 tbsp coconut flour
  • 1 tbsp cacao powder
  • 1/2 cup extra dark chocolate chips, divided
  • 1 tsp baking soda
  • dash of sea salt

Preparation

  1. In a large bowl, mash peeled sweet potatoes with banana until smooth

  2. Note, you can do this in a food processor as well

  3. Add applesauce, vanilla, peanut butter, maple syrup, and flax egg and mix until creamy (it may be a bit chunky, and that’s okay)

  4. Add flours, cacao, and baking powder and mix well

  5. Fold in 1/2 of the chocolate chips

  6. Pour into a lightly oiled glass baking dish and spread evenly

  7. Sprinkle remaining chocolate chips and sea salt over the top

  8. Bake at 350 for 20-25 minutes

  9. The center may not be cooked “fully through,” but that’s okay, they are vegan so edible and delicious either way
