Three Ingredient Nut Butter No-Bake Balls

Ingredients

  • 1/2 cup nut butter (I used cashew butter)
  • 1/4 cup + 1 tbsp coconut flour
  • 1/4 cup maple syrup

Icing mix

  • 1/4 cup coconut butter
  • 1/4 cup unsweetened almond milk
  • 2 tbsp maple syrup

Preparation

  1. Combine the nut butter, coconut flour, and maple syrup in a bowl and mix together.

  2. Use a cookie scoop to shape the mixture into balls, then roll in hands to make them symmetrical.

  3. Spray hands with non-stick spray to prevent the batter from sticking.

  4. Line a pan with parchment paper and place the balls in the fridge for about an hour. This recipe makes about 9 balls.

  5. For the icing, mix coconut butter, almond milk, and maple syrup together.

  6. Microwave the icing mixture for 15 seconds to make it liquid.

  7. Coat each ball with the icing.

  8. Place the coated balls back in the fridge for 30 minutes to an hour so the icing hardens.

  9. Enjoy and try not to eat them all at once.
