Minty Fudge Avocado Brownies

Ingredients

  • 2 small avocados
  • 2 tbsp coconut butter
  • 2 flax eggs
  • 2 tbsp coconut oil
  • 2 tbsp almond butter
  • 1/4 cup coconut flour
  • 1/4 cup almond or hazelnut flour
  • 4 tbsp cacao powder
  • Optional: protein, collagen, adaptogens (I added maca)
  • 10-12 drops monk fruit or 3 tbsp maple syrup
  • 1/8 tsp pure peppermint extract
  • 1/8 cup super dark chocolate chips
  • 1 tsp baking soda
  • Dash sea salt

Frosting mix

  • 1/4 cup coconut cream
  • 1 tbsp sunflower butter
  • 2 tbsp cacao
  • 3-4 drops monk fruit

Preparation

  1. Mix the batter and spread into a lined baking dish.

  2. Bake for 15-17 minutes at 350 degrees.

Frosting

  1. Blend ingredients together until creamy.

  2. Spread over the brownies once they have cooled.
