Vegan Paleo Thin Mint Brownies
Ingredients
- 2 flax eggs
- 2 tbsp coconut oil
- 1 tbsp olive oil
- 1/2 cup almond milk
- 1 ripe banana
- 4 pre-soaked medjool dates
- 1/4 cup buckwheat flour (or any GF flour)
- 1/4 cup almond flour
- 3 tbsp raw cacao powder
- 2 tsp spirulina
- 1 tsp Vanilla Extract
- 1 tsp pure peppermint oil
- 1/3 cup unsweetened extra dark chocolate (I used 100% cacao)
- Dash of Cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
- sprinkle with sea salt (for topping)
Preparation
Blend banana and dates in food processor.
Add all wet ingredients in a large bowl and mix well.
Add in dry ingredients and mix until thick batter forms.
Spread into a baking tray lined with parchment paper.
Sprinkle with sea salt and bake at 350 for 15 minutes.
Spread a gooey layer of melted 100% cacao chocolate and almond butter swirl over the top.
