Vegan Paleo Thin Mint Brownies

Ingredients

  • 2 flax eggs
  • 2 tbsp coconut oil
  • 1 tbsp olive oil
  • 1/2 cup almond milk
  • 1 ripe banana
  • 4 pre-soaked medjool dates
  • 1/4 cup buckwheat flour (or any GF flour)
  • 1/4 cup almond flour
  • 3 tbsp raw cacao powder
  • 2 tsp spirulina
  • 1 tsp Vanilla Extract
  • 1 tsp pure peppermint oil
  • 1/3 cup unsweetened extra dark chocolate (I used 100% cacao)
  • Dash of Cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • sprinkle with sea salt (for topping)

Preparation

  1. Blend banana and dates in food processor.

  2. Add all wet ingredients in a large bowl and mix well.

  3. Add in dry ingredients and mix until thick batter forms.

  4. Spread into a baking tray lined with parchment paper.

  5. Sprinkle with sea salt and bake at 350 for 15 minutes.

  6. Spread a gooey layer of melted 100% cacao chocolate and almond butter swirl over the top.

  7. Enjoy!
