Easy Vegan Layered Smoothie Bowl
Ingredients
- Yogurt of choice
- 1 tablespoon chia seeds
- 1/4 cup golden milk
- 1/2 cup cauliflower
- 1/2 cup blueberries
- 1 scoop collagen peptides (optional)
- 1 tablespoon nut butter
- 1/4 cup nut milk (optional)
Preparation
Steam the cauliflower until tender, then freeze it
Soak 1 tablespoon of chia seeds in 1/4 cup of golden milk for a few minutes until it thickens
Blend the frozen cauliflower, blueberries, collagen peptides (if using), nut butter, and nut milk until smooth to make the smoothie layer
Assemble the bowl by layering yogurt at the bottom, adding the soaked chia seeds in the middle, pouring the smoothie mixture on top, and finishing with desired toppings
