Fresh Peri-Peri Barbecue Sauce for Summer

Ingredients

  • 1 red onion, peeled and roughly chopped
  • 5 garlic cloves, peeled
  • 4 long red chillies, stems and seeds removed
  • 1 red capsicum, seeds removed and cut into chunks
  • 1 tomato, roughly chopped
  • 2 tbsp olive oil
  • juice and rind from 1 lemon
  • 2 tbsp red wine vinegar
  • 1 tbsp sugar
  • 2 tsp salt
  • 1 tsp cracked black pepper
  • 2 bay leaves
  • 2 tsp dried oregano
  • 1 tsp smoked paprika

Preparation

  1. Roast the onion, garlic, chillies and capsicum for 20 minutes at 200C.

  2. Blend it all together with the rest of the ingredients.

  3. If using the Vitamix Ascent blending bowls, divide the ingredients between 2 bowls.

  4. Blend for 30 seconds then store in the fridge until ready to use.

  5. You can spread it on a butterflied chicken and roast at 200C for 45 minutes, or brush it on anything you barbecue.
