Guacamole with Jalapeño and Red Peppers

Ingredients

  • 600g self raising flour
  • 320-350ml water
  • 30 ml olive oil
  • 1-2 tbsp herbes de provence
  • 2 tsp salt
  • 2 tsp baking powder
  • leave to rest for 15 mins, in a bowl covered with a damp cloth or cling film.

Preparation

  1. Mix the dry ingredients together in a large bowl then mix in the oil and water with a wooden spoon. When most of the flour has come together use your hands to knead it all together then turn out onto your work surface and continue to knead for 5-10 minutes until you have a smooth ball. You can also mix and knead in a food mixer if you have one

  2. Leave to rest for 15 mins, in a bowl covered with a damp cloth or cling film

  3. Preheat the oven to 200C

  4. Divide into 8 pieces and form into smooth balls

  5. Dust the work surface with flour and roll out to about 6/7 mm thick

  6. Place on lined or floured baking trays and bake for 5 minutes. They should puff up leaving a pocket inside

  7. Once done eat warm or cold with your favourite fillings or just spread some guacamole on top
