Healthy Chocolate Hazelnut Muffins

Ingredients

  • 2 cups rolled oats @earthfoodsme
  • 2 cups roasted hazelnuts
  • 1/2 cup cacao powder
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup non-dairy yogurt
  • 3/4 cup brewed coffee
  • 1/2 cup maple syrup
  • 2 flax eggs (2 tbsp ground flax + 4 tbsp water)
  • 1 tsp vanilla extract
  • 1/2 cup dark chocolate chips (80g)

Preparation

  1. Preheat the oven to 350ºF

  2. Grease your muffin pan with nonstick oil or line it with paper liners

  3. Chuck your oats and hazelnuts into the blender and grind them till they reach a fine flour consistency

  4. Combine all your wet ingredients in a mixing bowl, then add the dry ingredients including the oat and hazelnut flour

  5. Whisk batter until it is silky smooth and lump-free, then fold in the chocolate chips

  6. Fill 3/4 of the muffin pan with your batter

  7. Sprinkle chocolate chips on top of each muffin, and then pop it into the oven

  8. Bake for 30-35 minutes

  9. Let the muffin tray cool for 10-15 minutes before you serve it
