One Pot Puttanesca Pasta

Ingredients

  • 200g spaghetti
  • 250g cherry tomatoes
  • 1 onion
  • 2 cloves garlic
  • 80g pitted olives
  • 2 tbsp drained capers
  • 1 red chilli
  • 1/2 cup cooked lentils
  • A generous handful of chopped parsley
  • A glug of extra virgin olive oil
  • Salt and pepper to taste
  • 4 cups water

Preparation

  1. Add all ingredients to a very large pan.

  2. Drizzle the olive oil and pour over the water.

  3. Turn the heat on and simmer for 10-12 minutes, tossing the spaghetti occasionally until it is cooked and the sauce is reduced and clinging to it.

  4. Add a splash more hot water if the sauce is too thick or does not cover the pasta while it cooks.

  5. By the end, you should have a luscious creamy sauce. Sprinkle with some black pepper, extra fresh parsley, and enjoy.
