One Pot Puttanesca Pasta
Ingredients
- 200g spaghetti
- 250g cherry tomatoes
- 1 onion
- 2 cloves garlic
- 80g pitted olives
- 2 tbsp drained capers
- 1 red chilli
- 1/2 cup cooked lentils
- A generous handful of chopped parsley
- A glug of extra virgin olive oil
- Salt and pepper to taste
- 4 cups water
Preparation
Add all ingredients to a very large pan.
Drizzle the olive oil and pour over the water.
Turn the heat on and simmer for 10-12 minutes, tossing the spaghetti occasionally until it is cooked and the sauce is reduced and clinging to it.
Add a splash more hot water if the sauce is too thick or does not cover the pasta while it cooks.
By the end, you should have a luscious creamy sauce. Sprinkle with some black pepper, extra fresh parsley, and enjoy.
