Spicy Olive Oil Garlic Shell Pasta with Chickpeas

Ingredients

  • 2 boxes of Cooked Pasta Shells
  • 5 tbsp of good olive oil
  • 8 cloves of garlic, minced
  • 3 tsp of red chili flakes
  • 1 cup of cherry tomatoes, sliced in half
  • 1 can of chickpeas, drained
  • 1 cup of organic baby spinach
  • Juice from one lemon
  • Salt to taste

Preparation

  1. In a large sauce pan over a medium heat, heat the olive oil, add the chili flakes, minced garlic and sauté until fragrant by stirring it frequently for about 5 minutes.

  2. Add the sliced cherry tomatoes and cook until they are soft.

  3. Add the chickpeas and spinach and sauté for 8 minutes.

  4. Add the cooked pasta and lemon juice, then mix everything to coat the pasta in the sauce.

  5. Add salt to taste and enjoy immediately.
