Pulled Jackfruit Fajita Parcels

Ingredients

  • fatijas wraps: 6 large wraps
  • vegan cheddar: 1 cup grated
  • flour: 3 tbsp
  • water: 2tbsp
  • for pulled jackfruit:
  • jackfruit:1 tinned drained and washed
  • onion: 1 thinly sliced
  • pepper: 1 roughly chopped
  • tomatoes: 1 roughly chopped
  • tomato paste: 1 tbsp
  • bayleaf: 1
  • cumin powder: 2 tsp
  • smoked paprika: 1 tbsp
  • mixed dried herbs: 1 tbsp
  • vegan butter: 2 tbsp
  • balsamic vinegar: 1 tbsp
  • xylitol: 1 tbsp
  • salt to taste

Preparation

  1. Start by making pulled jack fruit

  2. Preheat oven to 175c

  3. Place all the listed ingredients in a baking disk and cook in the oven for 35-45 minutes till jackfruit is soft and melt in the mouth

  4. Place aside to cool

  5. Mix the flour with water to make a thick paste

  6. Cut a wrap in half

  7. Fold each half of the tortilla into a cone shape, sticking the side with a little flour paste

  8. Spoon in some cheddar cheese and top with pulled jackfruit

  9. Put some paste around the rim of the cone, then pinch and seal

  10. Place the parcels in a lined baking dish and brush with olive oil

  11. Roast in a preheated oven at 175c for 30-35 minutes turning halfway
