Raw Strawberry Cheesecake

Ingredients

  • 1 cup cashews
  • 1 cup pitted and soften medjool dates
  • filling:
  • 2 cups fresh strawberries
  • 1 cup cashews
  • 1/4 cup pure maple syrup
  • optionals:
  • yoursuperfoods forever beautiful
  • 2 tsp ashwaghanda
  • 2 tsp maca powder

Preparation

  1. In a food processor, blend cashews and dates until a sticky dough ball forms

  2. Roll out to a 1/4 inch layer on the bottom of a pie or cake pan (one with sides)

  3. I use a cake pan with the removable edges (from Amazon)

  4. Freeze the crust for 10 minutes

  5. Meanwhile, in a blender, combine filling ingredients and blend until creamy

  6. Pour over crust, it’ll be a little liquidy but will solidify in the freezer

  7. Top with fresh strawberries, coconut and chocolate chips! Freeze for at least 1-2 hours

  8. Enjoy
