Raw Strawberry Cheesecake
Ingredients
- 1 cup cashews
- 1 cup pitted and soften medjool dates
- filling:
- 2 cups fresh strawberries
- 1 cup cashews
- 1/4 cup pure maple syrup
- optionals:
- yoursuperfoods forever beautiful
- 2 tsp ashwaghanda
- 2 tsp maca powder
Preparation
In a food processor, blend cashews and dates until a sticky dough ball forms
Roll out to a 1/4 inch layer on the bottom of a pie or cake pan (one with sides)
I use a cake pan with the removable edges (from Amazon)
Freeze the crust for 10 minutes
Meanwhile, in a blender, combine filling ingredients and blend until creamy
Pour over crust, it’ll be a little liquidy but will solidify in the freezer
Top with fresh strawberries, coconut and chocolate chips! Freeze for at least 1-2 hours
