Luscious Raw No-Bake 3 Layered Creamy Cheesecake Treats

Ingredients

  • 1 cup raw cashews (soaked overnight)
  • 1/3 cup maple syrup
  • pinch of salt
  • 1/4 cup cacao butter (melted)
  • 1 tbs melted coconut oil
  • 1/3 cup coconut milk (can)
  • 1 tsp vanilla extract.
  • 1 tbsp cacao powder.
  • 1 tbsp matcha powder.
  • chocolate to melt on top
  • silicon muffin tray (makes 6)

Preparation

  1. Blend together soaked cashews, maple syrup, salt, cacao butter, coconut oil, coconut milk and vanilla extract until smooth and creamy

  2. Separate the mix into three so you can prepare all the layers required

  3. Add the cocoa powder to 1/3 of mix and combine until smooth

  4. Spoon chocolate layer into the moulds so they're 1/3 full

  5. Place in the freezer until they set

  6. Remove from freezer and spoon vanilla layer in until they're 1/2 full and return to freezer to set

  7. Add matcha powder to your last portion of mix and stir really well until smooth

  8. Remove moulds from the freezer and spoon the matcha layer in until they're full

  9. Return to the freezer and let them set overnight

  10. Time to decorate them

  11. I melted chocolate chips in the microwave and then drizzled (more like poured haha) over the cheesecakes with a big spoon

  12. Then popped them back in the freezer to set

  13. Yum!
