Raw Jaffa Slice

Ingredients

  • 3/4 cup almonds
  • 3/4 cup medjool dates
  • 1 tbsp cacao powder
  • filling
  • 1 cup cashews, soaked for an hour
  • 1/2 cup coconut yoghurt
  • juice of 1 orange
  • 1/2 cup melted coconut butter
  • 1/3 cup rice malt syrup
  • 1 tbsp cacao powder
  • 2 drops of orange oil, optional
  • vegan chocolate dipped dried orange slices, to decorate
  • melted vegan chocolate, to drizzle

Preparation

  1. Process the almonds into fine pieces. Add the dates and cacao powder and process again to form the base. Press into a lined loaf tin or cake tin

  2. Drain and rinse the cashews. Add everything to a high powered blender and blend until smooth

  3. Reserve about 1/2 a cup of the mixture. Let set in the fridge. Place the rest of the mixture over your base and smooth out evenly. Place in the freezer to set for a couple of hours before slicing. Slice then drizzle over some chocolate, pipe on the reserved mixture on one side and top with a slice of orange! Enjoy
