Raw Jaffa Slice
Ingredients
- 3/4 cup almonds
- 3/4 cup medjool dates
- 1 tbsp cacao powder
- filling
- 1 cup cashews, soaked for an hour
- 1/2 cup coconut yoghurt
- juice of 1 orange
- 1/2 cup melted coconut butter
- 1/3 cup rice malt syrup
- 1 tbsp cacao powder
- 2 drops of orange oil, optional
- vegan chocolate dipped dried orange slices, to decorate
- melted vegan chocolate, to drizzle
Preparation
Process the almonds into fine pieces. Add the dates and cacao powder and process again to form the base. Press into a lined loaf tin or cake tin
Drain and rinse the cashews. Add everything to a high powered blender and blend until smooth
Reserve about 1/2 a cup of the mixture. Let set in the fridge. Place the rest of the mixture over your base and smooth out evenly. Place in the freezer to set for a couple of hours before slicing. Slice then drizzle over some chocolate, pipe on the reserved mixture on one side and top with a slice of orange! Enjoy
