No Bake Lamington Cups

Ingredients

  • 40g dates
  • 40g almonds
  • 20g chocolate protein powder

Preparation

  1. Blend base ingredients and press into silicone moulds. Put in the fridge to set

  2. For the coconut layer: 100ml coconut cream, 40g desiccated coconut, 15ml coconut oil (melted)

  3. In a bowl stir together coconut layer ingredients until smooth and pour on top of the bases. Put in the freezer

  4. Once the coconut layer is set top with jam (I used my homemade raspberry chia jam). Put back in freezer to set

  5. Top the cups with melted chocolate (I melted 50g for the 6 cups)

  6. Store in the freezer
