Raw Strawberry Cream Slices

Ingredients

  • Blend 1/2 CUP OATS
  • 1/4 CUP ALMONDS
  • 1 TSP CACAO POWDER
  • r the FILLING
  • lend 1/2 CUP CASHEWS (soaked)
  • 1/2 CAN COCONUT MILK
  • 1 TBSP COCONUT OIL
  • around 4 STRAWBERRIES

Preparation

  1. Blend 1/2 CUP OATS + 1/4 CUP ALMONDS + 1 TSP CACAO POWDER until coarsely ground

  2. Add 3 DATES (+ optional 1/4 nut pulp from making nut milk) and pulse until mixture looks like wet sand

  3. Firmly press the mixture into the bottom and sides of your desired container

  4. Place in the freezer to set while working on the filling

  5. Blend 1/2 CUP CASHEWS (soaked) + 1/2 CAN COCONUT MILK + 1 TBSP COCONUT OIL + around 4 STRAWBERRIES (I would use more for a stronger strawberry flavour) + 3 TBSP MAPLE SYRUP + VANILLA EXTRACT

  6. Add the mixture to a pot and simmer over low-medium heat for about 10 minutes (this will help thicken the mixture so that it doesn’t fall apart!). Set aside for 5-10 minutes

  7. Pour mixture on top of the crust and place in the freezer for about 4 hours or overnight to set. * T

  8. Take out from the freezer about 1 hour before eating
