Delicious Raw Raspberry Slice

Ingredients

  • 1/2 cup raw cacao powder
  • 1/4 cup coconut oil, melted
  • 12 medjool dates, pitted
  • 2 cups cashews, soaked in water overnight
  • 1/3 cup shredded coconut
  • 1/2 cup maple syrup
  • 250g raspberries
  • 1/4 cup coconut oil
  • 1/3 cup maple syrup
  • 1/3 cup raw cacao powder

Preparation

  1. Line a 20cm pan with baking paper

  2. Blend all base ingredients, however only 1 cup of the cashews, in a blender and whiz until smooth. Spread evenly into pan and transfer to freezer for 30 minutes to firm up

  3. Next blend the filling ingredients, plus the remaining cup of cashews, in a blender and whiz until smooth. Spread over base mixture and return to freezer to firm up

  4. For the topping add all ingredients into a saucepan, over low heat, and stir until smooth and combined. Pour over the filling and return to freezer to let set

  5. Once topping has set, remove from freezer and pan and using a hot knife cut into 18 pieces. Keep in freezer and remove 30 minutes prior to serving. Recipe from Delicious
