Spinach and Cheese Triangles Delight

Ingredients

  • 1 bunch spinach or chard
  • 1 tbsp olive oil or spray olive oil
  • 1/2 onion
  • 1 leek
  • 2 garlic cloves
  • 1/2 tsp dried oregano
  • 1/2 tsp chili flakes
  • 1/4 cup chopped fresh dill
  • 1 tsp lemon zest
  • 1 cup cheese of choice (goat cheese, mozzarella, or cashew cheese)
  • 1 packet mountain bread wraps (rice wrap)

Preparation

  1. Preheat the oven to 180 degrees

  2. Steam the spinach lightly until it just starts to wilt, then set aside to cool and squeeze all the moisture from it, then dice

  3. Add the spinach and the remaining ingredients (excluding the olive oil) to a large bowl and fold through until even

  4. One-by-one, spray the underside of the wraps with olive oil, then place the spinach mix on the upside of the wrap, then roll halfway, fold in the bottom end, and then continue to roll

  5. Place the spinach-filled wraps one-by-one next to each other on a large lined baking tray or dish

  6. Place in the oven and cook for roughly 15 minutes or until golden and crunchy outer with a cheese melted inner
