Quick Spinach Mushroom Pasta Meal
Ingredients
- 8 oz dry pasta of your choice
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 8 oz white or brown mushrooms, sliced
- 1 tbsp dijon mustard
- 1/2 tsp each: salt, pepper, Italian herbs (or herbs of your choice)
- 3 tbsp nutritional yeast
- 4 tbsp toasted pine nuts (or nuts/seeds of your choice)
- 8 oz fresh spinach
Preparation
Cook the pasta according to package directions; drain and set aside.
Meanwhile, in a skillet, heat olive oil and saute the onion and garlic for 5 minutes.
Add in mushrooms, dijon mustard, salt, pepper, and herbs. Stir to incorporate and fry for 10-12 minutes, until mushrooms have released some of their water.
Stir in nutritional yeast, pine nuts, and spinach. Cook for another 5 minutes; once the spinach is wilted, toss in the pasta and mix well.
Serve warm and enjoy.
