Quick Spinach Mushroom Pasta Meal

Ingredients

  • 8 oz dry pasta of your choice
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 8 oz white or brown mushrooms, sliced
  • 1 tbsp dijon mustard
  • 1/2 tsp each: salt, pepper, Italian herbs (or herbs of your choice)
  • 3 tbsp nutritional yeast
  • 4 tbsp toasted pine nuts (or nuts/seeds of your choice)
  • 8 oz fresh spinach

Preparation

  1. Cook the pasta according to package directions; drain and set aside.

  2. Meanwhile, in a skillet, heat olive oil and saute the onion and garlic for 5 minutes.

  3. Add in mushrooms, dijon mustard, salt, pepper, and herbs. Stir to incorporate and fry for 10-12 minutes, until mushrooms have released some of their water.

  4. Stir in nutritional yeast, pine nuts, and spinach. Cook for another 5 minutes; once the spinach is wilted, toss in the pasta and mix well.

  5. Serve warm and enjoy.
