Vegan Allergy Friendly Sugar Cookies

Ingredients

  • 2 cups all purpose flour @bobsredmill
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 flax egg (1 tbsp ground flax + 3 tbsp water)
  • 3/4 cup vegan butter @earthbalance
  • 3/4 cup sugar
  • 3 tbsp almond milk @malkorganics
  • 2 tsp vanilla

Preparation

  1. Make your flax egg and let it sit for about 5 minutes.

  2. Mix all of your wet ingredients.

  3. In a separate bowl, mix your dry ingredients.

  4. Pour the dry ingredients into the bowl with the wet ingredients and mix together, pouring dry ingredients in halves if it helps.

  5. Once you have a dough like texture, refrigerate it for at least 30 minutes.

  6. Roll it out between two pieces of parchment paper and cut out your shapes.

  7. Bake your cookies for about 10 minutes at 350°F and enjoy.
