Crunchy Kale, Red Cabbage, and Pomegranate Salad
Ingredients
- 100g curly kale
- 180g red cabbage, finely shredded
- 1/2 a red onion, finely sliced
- 1/2 a pomegranate
- 3 tbsp olive oil
- 1 tbsp apple cider vinegar OR lemon juice
- 1 tsp honey (or try pomegranate or date molasses as alternatives)
- Pinch of salt + pepper (to taste)
Preparation
Finely slice the cabbage and onion, and prepare the pomegranate arils. If desired, you can cut the kale leaves into smaller pieces. Combine all these ingredients in a large bowl.
In a lidded jar, mix together the olive oil, apple cider vinegar or lemon juice, honey, salt, and pepper. Shake the jar well to thoroughly combine the dressing.
Pour the dressing over the salad ingredients in the bowl. Toss everything together until the salad is well-coated with the dressing. Let the salad sit for at least an hour before serving, allowing the flavors to meld together. You can even prepare it the night before for even better flavor.
