Vibrant Chickpea, Corn & Mango Rainbow Salad 🥭
Ingredients
- 1 cup corn kernels
- 1 cup diced mango
- 1 can of chickpeas, rinsed
- 1 cup cilantro
- 1 red onion, thinly sliced
- 1 Serrano chili, diced
- 1 capsicum, thinly sliced
- 1/4 cup thinly sliced green onion
- 1/3 cup lime juice
- 1/4 cup olive oil
- 2 tsp pure dark brown maple syrup 🍁
- 1 tsp red pepper flakes
- Salt and pepper to taste
Preparation
In two serving bowls, combine the corn kernels, diced mango, rinsed chickpeas, cilantro, thinly sliced red onion, diced Serrano chili, thinly sliced capsicum, and sliced green onion.
In a separate bowl, whisk together the olive oil, lime juice, pure dark brown maple syrup, red pepper flakes, salt, and pepper until well combined.
Drizzle the dressing mixture over each of the serving bowls containing the vegetables and fruits.
Toss the salad gently to ensure all ingredients are coated with the dressing.
