Sweet Potato Avocado Bites
Ingredients
- 1-2 sweet potatoes, cut into 1/4-inch rounds (use thinner potatoes for bite-size pieces)
- 1-2 avocados, peeled and pitted
- 1/2 cup baby tomatoes, sliced
- 1 lime, juiced (more if desired)
- Sriracha or hot sauce of choice (or salsa)
- Salt and pepper to taste
- 1/2 teaspoon garlic powder
- Sunflower sprouts or any sprout/green garnish of choice
- 1-2 teaspoons olive oil
Preparation
Preheat the oven to 400 degrees Fahrenheit. Place sweet potato slices on a baking sheet lined with parchment paper.
Drizzle olive oil over the sweet potato slices, and season with salt, pepper, and garlic powder. Mix evenly with hands and spread out in a single layer.
Bake for about 25-30 minutes or until the sweet potato slices crisp slightly and turn brown.
Mash the avocado until smooth. Add lime juice, salt, pepper, and sriracha to taste.
Once the sweet potatoes are done, transfer them to a serving dish. Use a piping bag or a plastic bag with a corner cut off to create even dollops of avocado on each sweet potato slice.
Place a sliced tomato on top of the avocado dollop, and garnish with a sprout or green of choice.
