Vegan Cocktail Weiners
Ingredients
- 2 blocks of extra-firm tofu (approx. 600g)
- 1.5 oz tapioca starch (45g)
- 1 oz cassava flour* (30g)
- 2 1/2 tablespoons avocado oil or other vegetable oil of choice (35ml)
- 2 tablespoons agave syrup (30ml)
- 4 teaspoons tomato paste (20ml)
- 1 tablespoon tamari (15ml)
- 1 teaspoon liquid smoke
- 1 tablespoon salt or miso paste as an alternative
- 1/2 teaspoon each of black pepper, smoked paprika, onion powder, garlic powder, yellow mustard
Preparation
Drain and press the tofu overnight.
Transfer the drained tofu to a food processor. Add tapioca starch, flour, oil, agave syrup, tomato paste, tamari, and spices. Process for about 30 seconds or until a smooth and sticky paste forms.
Cut 8 squares (4x4.5 inches) of plastic wrap or parchment paper and place them on the counter. Take about 1 tablespoon of the tofu mixture, roll it gently into a ball using slightly oiled hands, and place it on one of the plastic wrap rectangles. Repeat with the remaining mixture to form 8 balls.
Roll each ball tightly in the wrap, slightly pressing with your fingers to create a short log or cocktail sausage shape. Use the palm of your hand to gently roll the sausage back and forth to lengthen it. Twist the ends of the wrap tightly to seal them, resembling a wrapped candy.
