Vegan Taco Meat Tacos with Smoky Chipotle Flavor

Ingredients

  • 1, 15oz can black beans, rinsed and drained
  • 1 1/2 cups walnuts, chopped
  • 1 tsp cumin
  • 1 tsp sazón
  • 1/2 tsp ground coriander
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Pinch of kosher salt and pepper
  • 2 chipotle peppers canned in adobo sauce (you can add a little bit of the sauce too)

Preparation

  1. Preheat the oven to 375°F.

  2. In a mixing bowl, combine the black beans, chopped walnuts, cumin, sazón, ground coriander, smoked paprika, garlic powder, salt, and pepper. Mix well to combine.

  3. Spread the mixture evenly on a baking tray.

  4. Place the tray in the preheated oven and bake for 15-20 minutes.

  5. Allow the mixture to cool, then transfer it to a food processor.

  6. Pulse the mixture a few times until it resembles ground meat texture.

  7. When ready to serve, sauté the mixture in a little oil to warm it up.

  8. Serve the vegan taco meat in taco shells or in a salad bowl for added flavor.

  9. Don't forget to top with avocado for extra deliciousness!
