Vegan Taco Meat Tacos with Smoky Chipotle Flavor
Ingredients
- 1, 15oz can black beans, rinsed and drained
- 1 1/2 cups walnuts, chopped
- 1 tsp cumin
- 1 tsp sazón
- 1/2 tsp ground coriander
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Pinch of kosher salt and pepper
- 2 chipotle peppers canned in adobo sauce (you can add a little bit of the sauce too)
Preparation
Preheat the oven to 375°F.
In a mixing bowl, combine the black beans, chopped walnuts, cumin, sazón, ground coriander, smoked paprika, garlic powder, salt, and pepper. Mix well to combine.
Spread the mixture evenly on a baking tray.
Place the tray in the preheated oven and bake for 15-20 minutes.
Allow the mixture to cool, then transfer it to a food processor.
Pulse the mixture a few times until it resembles ground meat texture.
When ready to serve, sauté the mixture in a little oil to warm it up.
Serve the vegan taco meat in taco shells or in a salad bowl for added flavor.
Don't forget to top with avocado for extra deliciousness!
