Flourless Dark Chocolate Brownie Cookie Monsters
Ingredients
- 1 cup nut/seed butter (e.g., Sunbutter)
- 1/2 cup coconut sugar
- 1/4 cup tapioca starch
- 1/4 cup cacao or cocoa powder
- 1/3 cup nondairy milk
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1/2 tsp salt
Preparation
Whisk together the nut/seed butter, coconut sugar, nondairy milk, and vanilla extract until smooth.
Add tapioca starch, cacao or cocoa powder, baking soda, and salt. Mix until a thick dough forms.
Scoop out 1 tablespoon of dough and roll it into a ball. Place the dough balls on a baking pan lined with parchment paper, leaving some space between them as they will spread.
Bake for 12-14 minutes at 350°F (180°C).
Allow the cookies to cool completely before removing them from the pan.
