Vegan Tteokbokki (Rice Cakes)

Ingredients

  • 2 cups rice cakes
  • 2 cups vegetable broth
  • 1/4 cup soy sauce
  • 3 tablespoons Korean chili paste
  • 1 tablespoon nut butter
  • 2 tablespoons sweetener of choice
  • 1 cup mushrooms, sliced
  • 1 cup shredded cheese

Preparation

  1. Soak rice cakes in hot water for 10 minutes.

  2. Mix all remaining ingredients except the cheese in a saucepan and bring to a light simmer.

  3. Add the rice cakes and cook for 20 minutes.

  4. Add cheese to the top and place under the broiler until the cheese has melted. Enjoy!
