Vegan Tteokbokki (Rice Cakes)
Ingredients
- 2 cups rice cakes
- 2 cups vegetable broth
- 1/4 cup soy sauce
- 3 tablespoons Korean chili paste
- 1 tablespoon nut butter
- 2 tablespoons sweetener of choice
- 1 cup mushrooms, sliced
- 1 cup shredded cheese
Preparation
Soak rice cakes in hot water for 10 minutes.
Mix all remaining ingredients except the cheese in a saucepan and bring to a light simmer.
Add the rice cakes and cook for 20 minutes.
Add cheese to the top and place under the broiler until the cheese has melted. Enjoy!
