Vibrant Veggie Buddha Bowl with Peanut Butter Dressing

Ingredients

  • 5 heaped tbsp peanut butter
  • 1 tbsp lime juice
  • 1/2 tbsp rice vinegar
  • 2 tbsp Japanese soy sauce
  • 2 tbsp syrup
  • Ginger powder or fresh ginger
  • Optional: minced garlic
  • 2-3 tbsp water or oat cream

Preparation

  1. In a bowl, combine the peanut butter, lime juice, rice vinegar, Japanese soy sauce, syrup, and ginger.

  2. If desired, add minced garlic for extra flavor.

  3. Gradually add 2-3 tablespoons of water or oat cream to achieve the desired consistency. Mix until smooth.

  4. Set aside the peanut butter dressing for later use.
