Vibrant Veggie Buddha Bowl with Peanut Butter Dressing
Ingredients
- 5 heaped tbsp peanut butter
- 1 tbsp lime juice
- 1/2 tbsp rice vinegar
- 2 tbsp Japanese soy sauce
- 2 tbsp syrup
- Ginger powder or fresh ginger
- Optional: minced garlic
- 2-3 tbsp water or oat cream
Preparation
In a bowl, combine the peanut butter, lime juice, rice vinegar, Japanese soy sauce, syrup, and ginger.
If desired, add minced garlic for extra flavor.
Gradually add 2-3 tablespoons of water or oat cream to achieve the desired consistency. Mix until smooth.
Set aside the peanut butter dressing for later use.
