Avocado Cucumber Raw Soup Smoothie
Ingredients
- 1 avocado
- 1/3 cucumber
- Handful shredded kale
- Juice of 1 lemon
- 1 slice fresh ginger
- 1 tsp lemongrass pureé
- 1/2 can coconut milk
Preparation
Chop the avocado and cucumber.
Add them to a blender with all the other ingredients and blend until smooth.
Use more coconut milk if you want a thinner soup.
Drizzle with coconut milk to serve.
