Avocado Cucumber Raw Soup Smoothie

Ingredients

  • 1 avocado
  • 1/3 cucumber
  • Handful shredded kale
  • Juice of 1 lemon
  • 1 slice fresh ginger
  • 1 tsp lemongrass pureé
  • 1/2 can coconut milk

Preparation

  1. Chop the avocado and cucumber.

  2. Add them to a blender with all the other ingredients and blend until smooth.

  3. Use more coconut milk if you want a thinner soup.

  4. Drizzle with coconut milk to serve.
