Chocolate Chip Banana Coconut Mug Cake
Ingredients
- 1 ripe banana
- 1 cage-free egg or flax egg
- 2 tbsp pure maple syrup or date nectar
- 1 tbsp coconut oil
- 4 tbsp Bob's Red Mill coconut flour
- 1/2 tsp cinnamon
- dark chocolate chips
- Trader Joe's toasted coconut flakes
- almond butter, peanut butter, or any nut butter
Preparation
Mix the mashed banana, egg, coconut oil, and maple syrup.
Fold in the dry ingredients and mix.
Add the chocolate chips and coconut flakes.
Microwave for about 3 minutes or until a toothpick comes out clean.
