Decadent Chocolate Mousse with Tofu

Ingredients

  • 1 pack of plain organic tofu
  • 1/3 cup of raw cacao powder
  • 1/3 cup of pure maple syrup

Caramel sauce

  • 2 tbsp coconut oil
  • 2 tbsp macadamia or cashew butter
  • 2 tbsp pure maple syrup

Optional toppings

  • extra cacao for sprinkling
  • berries

Preparation

  1. Blend the tofu, cacao powder, and maple syrup together until smooth, then set aside.

  2. Gently heat the caramel sauce ingredients in a small pan until melted.

  3. Stir in 4 tablespoons of the sauce into the mousse.

  4. Pour the mousse into two ramekins and leave to set in the fridge, preferably overnight.

  5. Drizzle the remaining sauce over the top when serving, along with any toppings.
