More Veggie Than Eggs Frittata in Skillet

Ingredients

  • 1 tablespoon olive oil
  • 1/2 purple sweet potato, cubed
  • 1/2 orange sweet potato, cubed
  • 1/2 red onion
  • two large handfuls of kale
  • 5 eggs
  • 1/2 teaspoon sweet paprika
  • 1/2 teaspoon Spanish smoked paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 tomato
  • 1 tablespoon nutritional yeast

Preparation

  1. Cook the cubed sweet potatoes and red onion in olive oil for 10 minutes on the stove.

  2. Add kale and cook for 2 minutes.

  3. Whisk eggs with sweet paprika, Spanish smoked paprika, turmeric, pepper, and salt, then pour over the skillet and gently combine.

  4. Slice a tomato and place it on top, then sprinkle with nutritional yeast.

  5. Place the skillet in a preheated oven at 200°C for about 15 minutes until the edges separate from the skillet.

  6. Optionally, sprinkle the frittata as desired.
