More Veggie Than Eggs Frittata in Skillet
Ingredients
- 1 tablespoon olive oil
- 1/2 purple sweet potato, cubed
- 1/2 orange sweet potato, cubed
- 1/2 red onion
- two large handfuls of kale
- 5 eggs
- 1/2 teaspoon sweet paprika
- 1/2 teaspoon Spanish smoked paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 1 tomato
- 1 tablespoon nutritional yeast
Preparation
Cook the cubed sweet potatoes and red onion in olive oil for 10 minutes on the stove.
Add kale and cook for 2 minutes.
Whisk eggs with sweet paprika, Spanish smoked paprika, turmeric, pepper, and salt, then pour over the skillet and gently combine.
Slice a tomato and place it on top, then sprinkle with nutritional yeast.
Place the skillet in a preheated oven at 200°C for about 15 minutes until the edges separate from the skillet.
Optionally, sprinkle the frittata as desired.
