Savoury Chickpea Flour Pancakes with Veggies
Ingredients
- 300gms chickpea flour (besan)
- 400mls water
- 1.5 teaspoons turmeric
- Large handful coriander - finely chopped
- 1 small red onion finely chopped
- 500 gms of baby veggies of choice all finely chopped or grated (I used baby corn, spinach leaves, courgettes, asparagus, broccoli & green beans)
- Salt to taste
- Oil to fry
Preparation
Simple mix the flour, turmeric, salt and water to form a batter.
Add in the veggies and stir well.
Spray a pan with oil.
Spread about 3 tablespoons of batter as thin as possible and fry on a medium heat for a few minutes each side.
Adjust the heat to cook through but not burn the pancakes.
Tip: If you want crispy pancakes, grate the veggies or chop them super finely.
