Savoury Chickpea Flour Pancakes with Veggies

Ingredients

  • 300gms chickpea flour (besan)
  • 400mls water
  • 1.5 teaspoons turmeric
  • Large handful coriander - finely chopped
  • 1 small red onion finely chopped
  • 500 gms of baby veggies of choice all finely chopped or grated (I used baby corn, spinach leaves, courgettes, asparagus, broccoli & green beans)
  • Salt to taste
  • Oil to fry

Preparation

  1. Simple mix the flour, turmeric, salt and water to form a batter.

  2. Add in the veggies and stir well.

  3. Spray a pan with oil.

  4. Spread about 3 tablespoons of batter as thin as possible and fry on a medium heat for a few minutes each side.

  5. Adjust the heat to cook through but not burn the pancakes.

  6. Tip: If you want crispy pancakes, grate the veggies or chop them super finely.
