Tofu Scramble with Spinach and Avocado Toast

Ingredients

  • Half block silk tofu
  • Chopped onions
  • Chopped spinach
  • 1 tbs nutritional yeast
  • 1/2 tsp garlic powder
  • 1/4 tsp turmeric
  • 1/4 tsp salt
  • Dash of pepper

Preparation

  1. Heat up a skillet with oil and toss in onions. Cook until translucent.

  2. Add in spinach.

  3. In the meantime, add the rest of the ingredients into a blender and blend lightly.

  4. Pour the mixture into the skillet, mixing occasionally until the mixture looks fluffy.

  5. Plate it with some avocado toast and fresh fruit. I had grapefruit here!
