Tofu Scramble with Spinach and Avocado Toast
Ingredients
- Half block silk tofu
- Chopped onions
- Chopped spinach
- 1 tbs nutritional yeast
- 1/2 tsp garlic powder
- 1/4 tsp turmeric
- 1/4 tsp salt
- Dash of pepper
Preparation
Heat up a skillet with oil and toss in onions. Cook until translucent.
Add in spinach.
In the meantime, add the rest of the ingredients into a blender and blend lightly.
Pour the mixture into the skillet, mixing occasionally until the mixture looks fluffy.
Plate it with some avocado toast and fresh fruit. I had grapefruit here!
