Moong Bean Flour Savoury Pancakes
Ingredients
- 2 cups moong flour or 2 cups soaked moong
- 1 handful of coriander (roughly 30g)
- small piece of ginger about 4-5cm
- 1 teaspoon salt
- 1 teaspoon cumin powder
- 1 mild green chilli or 1 teaspoon black pepper
- 1 cup coconut milk and 500ml water or just water
- oil spray, preferably coconut oil
Preparation
Blitz all ingredients and whisk into the flour or blitz if using soaked moong beans. Make sure the consistency is fluidy to work with the squeezy bottle.
Heat a non-stick pan, swirl around some batter and have fun.
Wait for some surface bubbles and spray some oil.
Flip the pancake and sing a song while doing so.
Serve with any sauce you like, sprinkle with cheese, stuff with curried veggies, eat plain or dip in yoghurt - just be imaginative.
