Aloo Paratha with Spiced Potato Filling

Ingredients

Stuffing

  • 4 boiled and mashed potatoes
  • 1 tablespoon coriander
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1 teaspoon green chili paste, or to taste
  • 1/2 teaspoon chaat masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 1 teaspoon oil

Dough

  • 2 cups whole wheat flour
  • Water as needed
  • Salt to taste
  • 1 tablespoon oil (optional)

Preparation

Stuffing

  1. Mash the potatoes.

  2. In a non-stick pan, heat 1 teaspoon oil.

  3. Add ginger paste, garlic paste, and green chili paste; fry for 2 seconds.

  4. Add turmeric powder, red chili powder, and chaat masala; mix well.

  5. Add the mashed potatoes, coriander, and salt; fry for 2-3 minutes.

  6. Set aside to cool for 30-40 minutes.

Paratha assembly

  1. Prepare the dough by mixing whole wheat flour, salt, and water to form a soft dough; knead well and let rest for 15 minutes.

  2. Divide the dough and stuffing into equal portions.

  3. Roll a dough ball into a small circle, place a portion of stuffing in the center, seal the edges, and roll into a paratha.

  4. Heat a tawa or griddle, cook the paratha on both sides with oil until golden brown.
