Vegan Breakfast Toast with Roasted Veggies

Ingredients

  • cocktail tomatoes
  • bell pepper
  • balsamico vinegar
  • oil
  • salt
  • pepper
  • minced garlic (optional)
  • basil leaves (optional)
  • bread
  • spinach
  • vegan Greek cheese
  • tahini
  • margarine
  • chilli flakes
  • black pepper

Preparation

  1. Place the cocktail tomatoes and bell pepper in an oven-safe dish.

  2. Drizzle with balsamico vinegar, oil, salt, and pepper, ensuring they are fully coated. Optionally add minced garlic and basil leaves.

  3. Roast in the oven at 190°C for 25 minutes.

  4. Meanwhile, toast the bread slices.

  5. Spread a little margarine on each toasted slice.

  6. Add spinach, vegan Greek cheese, and tahini on top.

  7. Once the roasted vegetables are done, place them on top of the toast.

  8. Season with chilli flakes and black pepper, then serve and enjoy.
