Vibrant Turmeric Cauliflower Rice Pilaf

Ingredients

  • 1 head cauliflower
  • 1 tablespoon coconut oil
  • chopped carrots (quantity as desired)
  • green peas (quantity as desired)
  • sprouted lentils (quantity as desired)
  • 2 teaspoons turmeric
  • 2 teaspoons sea salt
  • 2 teaspoons cumin
  • 2 teaspoons black pepper

Preparation

  1. Rice the cauliflower to create a rice-like texture.

  2. In a large wok, add 1 tablespoon coconut oil and lightly sauté the chopped carrots, green peas, and sprouted lentils.

  3. Add the riced cauliflower along with 2 teaspoons each of turmeric, sea salt, cumin, and black pepper, and toss for 2-3 minutes.
