Warm Up with Vegan Chili

Ingredients

  • 1 medium onion
  • 1 medium green pepper
  • 4 cloves garlic
  • 3 cups vegetable broth
  • 15 ounce can tomato sauce
  • 15 ounce can diced tomatoes
  • 15 ounce can kidney beans
  • 15 ounce can great northern beans
  • 15 ounce can black beans
  • 1 tablespoon baking cocoa
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon oregano
  • 1/8 teaspoon cayenne pepper
  • 1 cup frozen corn

Preparation

  1. Sauté the onion, green pepper, and garlic in a large pot over medium heat until softened

  2. Add the chili powder, oregano, black pepper, cayenne pepper, and baking cocoa; stir well to combine

  3. Stir in the vegetable broth, tomato sauce, diced tomatoes, kidney beans, great northern beans, and black beans; bring to a boil

  4. Reduce heat and simmer for 20-30 minutes, or until flavors are well blended

  5. Add the frozen corn and cook for an additional 5 minutes
