Warm Up with Vegan Chili
Ingredients
- 1 medium onion
- 1 medium green pepper
- 4 cloves garlic
- 3 cups vegetable broth
- 15 ounce can tomato sauce
- 15 ounce can diced tomatoes
- 15 ounce can kidney beans
- 15 ounce can great northern beans
- 15 ounce can black beans
- 1 tablespoon baking cocoa
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder
- 1/2 teaspoon oregano
- 1/8 teaspoon cayenne pepper
- 1 cup frozen corn
Preparation
Sauté the onion, green pepper, and garlic in a large pot over medium heat until softened
Add the chili powder, oregano, black pepper, cayenne pepper, and baking cocoa; stir well to combine
Stir in the vegetable broth, tomato sauce, diced tomatoes, kidney beans, great northern beans, and black beans; bring to a boil
Reduce heat and simmer for 20-30 minutes, or until flavors are well blended
Add the frozen corn and cook for an additional 5 minutes
