Hearty Pumpkin Chickpea Moroccan Stew
Ingredients
- 1 tbsp olive oil
- 1 finely minced onion
- 1 cup chopped pumpkin (cut into about 1 inch pieces)
- 4 minced garlic cloves
- 1-28oz can diced tomatoes
- 1 tbsp ras el hanout
- 2 cups vegetable broth
- 2 tbsp tahini
- 2-15oz can chickpeas
- 1 tbsp red wine vinegar
Preparation
Heat 1 tbsp olive oil and sauté 1 finely minced onion until translucent.
Add 1 cup chopped pumpkin and 4 minced garlic cloves and sauté another few minutes.
Add 1-28oz can diced tomatoes and 1 tbsp ras el hanout and cook 5 minutes.
Stir in 2 cups vegetable broth. Reduce heat and simmer uncovered 10 minutes.
Mix in 2 tbsp tahini, 2-15oz can chickpeas, 1 tbsp red wine vinegar.
Simmer until pumpkin softens.
Adjust seasonings to taste.
