Hearty Pumpkin Chickpea Moroccan Stew

Ingredients

  • 1 tbsp olive oil
  • 1 finely minced onion
  • 1 cup chopped pumpkin (cut into about 1 inch pieces)
  • 4 minced garlic cloves
  • 1-28oz can diced tomatoes
  • 1 tbsp ras el hanout
  • 2 cups vegetable broth
  • 2 tbsp tahini
  • 2-15oz can chickpeas
  • 1 tbsp red wine vinegar

Preparation

  1. Heat 1 tbsp olive oil and sauté 1 finely minced onion until translucent.

  2. Add 1 cup chopped pumpkin and 4 minced garlic cloves and sauté another few minutes.

  3. Add 1-28oz can diced tomatoes and 1 tbsp ras el hanout and cook 5 minutes.

  4. Stir in 2 cups vegetable broth. Reduce heat and simmer uncovered 10 minutes.

  5. Mix in 2 tbsp tahini, 2-15oz can chickpeas, 1 tbsp red wine vinegar.

  6. Simmer until pumpkin softens.

  7. Adjust seasonings to taste.
