Creamy Hummus Pasta with Peas and Brussels Sprouts
Ingredients
- 1.5 cups chickpeas (14 oz)
- 3 tbsp tahini
- 2-3 cloves garlic
- 1 tsp salt
- juice of 1/2 lemon
- 1/3 cup olive oil, or use water/aquafaba
- 8 oz dry pasta
Preparation
In a pot, cook your pasta according to package instructions; drain and set aside.
Meanwhile, in a food processor, combine all the hummus ingredients and blend until smooth and creamy.
Add more liquid as needed to reach the consistency of a pasta sauce.
Serve with cooked pasta and enjoy.
