Creamy Hummus Pasta with Peas and Brussels Sprouts

Ingredients

  • 1.5 cups chickpeas (14 oz)
  • 3 tbsp tahini
  • 2-3 cloves garlic
  • 1 tsp salt
  • juice of 1/2 lemon
  • 1/3 cup olive oil, or use water/aquafaba
  • 8 oz dry pasta

Preparation

  1. In a pot, cook your pasta according to package instructions; drain and set aside.

  2. Meanwhile, in a food processor, combine all the hummus ingredients and blend until smooth and creamy.

  3. Add more liquid as needed to reach the consistency of a pasta sauce.

  4. Serve with cooked pasta and enjoy.
