Zucchini Bread Overnight Oats

Ingredients

  • 1/4 cup coconut yogurt
  • 1/4 cup oatmilk
  • 1 tbsp shredded coconut
  • 1/2 tsp ceylon cinnamon powder
  • dash* of bourbon vanilla powder
  • dash* of ground ginher
  • dash* of ground cloves
  • dash* of ground nutmeg
  • 1/4 cup grated zucchini - excess liquid pressed out
  • 1/2 cup oats

Preparation

  1. Mix banana, yogurt and milk in a bowl

  2. Add spices and coconut and mix again

  3. Add zucchini and oats and mix again

  4. Store in an airtight container in the frdge overnight. --------

  5. Build the bowl

  6. In the morning, give the oats a stir. Top with banana slices, (frozen) blueberries, pumpkin seeds, chopped walnuts, almond flakes, shredded coconut and a spoonful of nutbutter

  7. Enjoy ? ? * a dash for me is about half of a 1/8 tsp or slightly less than that
