Zucchini Bread Overnight Oats
Ingredients
- 1/4 cup coconut yogurt
- 1/4 cup oatmilk
- 1 tbsp shredded coconut
- 1/2 tsp ceylon cinnamon powder
- dash* of bourbon vanilla powder
- dash* of ground ginher
- dash* of ground cloves
- dash* of ground nutmeg
- 1/4 cup grated zucchini - excess liquid pressed out
- 1/2 cup oats
Preparation
Mix banana, yogurt and milk in a bowl
Add spices and coconut and mix again
Add zucchini and oats and mix again
Store in an airtight container in the frdge overnight. --------
Build the bowl
In the morning, give the oats a stir. Top with banana slices, (frozen) blueberries, pumpkin seeds, chopped walnuts, almond flakes, shredded coconut and a spoonful of nutbutter
Enjoy ? ? * a dash for me is about half of a 1/8 tsp or slightly less than that
