Coconut Cardamon Overnight Oats

Ingredients

  • For the oats
  • 1/2 ripe banana - mashed
  • 1/4 cup coconut milk
  • 1/4 cup coconut yogurt
  • 1/8 or 1/4 tsp ground cardamon
  • 3 tbsp shredded coconut
  • Dash of bourbon vanilla powder
  • 1/2 cup oats
  • For the toppings
  • 1/2 cup rasberries + 1 tbsp water
  • Coconut flakes
  • Chopped pistachios
  • A spoonful of coconut yogurt
  • Some chocolat chips
  • Extra raspberries to serve

Preparation

  1. Make the oats

  2. Mix banana, yogurt and milk in a bowl

  3. Add coconut and spices and mix again

  4. Add oats and mix again

  5. Store in an airtight container in the fridge overnight

  6. For the toppings

  7. Add the raspberries and water to a small sauce pan

  8. Let simmer on a low heat until all rasberries are cooked down

  9. Let cool

  10. Strain the rasberries to collect the juice

  11. Toast the coconut flakes in a fryingpan on a low heat. Keep a close eye on it, it burns quickly

  12. Build the bowl

  13. Give the oats a stir

  14. Top with a spoonful of coconut yogurt, chopped pistachios, toasted coconut flakes, chocolat chips and the raspberry juice
