Coconut Ginger Oats

Ingredients

  • 1/2 cup rolled oats
  • 1/2 tbsp chia seeds/ground flax seeds
  • 1 tbsp shredded coconut
  • 1 medjool date, pitted
  • 1/4 tsp cinnamon
  • 1/4 tsp ground ginger
  • pinch cardamom
  • pinch salt
  • 1 cup unsweetened coconut milk

Preparation

  1. Add ingredients to a sauce pan and bring to a simmer

  2. Allow to thicken for about 5 minutes while stirring and then serve as desired

  3. My bowl has blueberries, mulberries, golden berries, persimmon, pepitas, peanut butter, and hemp hearts
