Pumpkin Pie Oats

Ingredients

  • 1/2 cup rolled oats
  • 1/4 cup canned pumpkin purée
  • 1/4 tsp cinnamon
  • pinch of cardamom
  • pinch of salt
  • 1 medjool date, pitted and mashed
  • 1 cup unsweetened almond milk

Preparation

  1. Add all ingredients to a sauce pan and bring it a simmer

  2. Stir and allow to thicken for about 5 minutes

  3. Serve and add toppings

  4. Banana coins, pomegranate seeds, mulberries, nibs, pepitas, and hemp seeds
