Zucchini Oats Breakfast with Chia Seeds

Ingredients

  • 1/2 cup rolled oats
  • 1/2 small zucchini, grated
  • 1/2 tablespoon chia seeds
  • 1 medjool date
  • 1/4 teaspoon cinnamon
  • Pinch of salt
  • 1 cup unsweetened almond milk

Preparation

  1. Combine all ingredients in a saucepan and bring to a simmer.

  2. As it cooks, use a spoon or spatula to break up the date as it softens and stir until the oats thicken.

  3. Add optional toppings such as peanut butter, caramelized banana, blueberries, golden berries, pepitas, hemp hearts, and pomegranate seeds.
